- Peel, seed and cut the cantaloupe into 1-inch cubes. Place in a large bowl.
- Slice onion into very thin rings. Sprinkle over cantaloupe. Add the chopped mint.
- In a separate bowl, whisk together olive oil, vinegar, honey, salt and pepper. Pour over melon, onion and mint.
- Toss gently until well blended. Serve chilled or at room temperature.
