Honey, Brie and Mango Salad

Bright mango dressing perks up a fresh salad featuring honey-coated Brie cubes.

Ingredients

  • 4 cups (5 ounces) fresh mixed greens
  • 8 ounces Brie, cut into 1-inch cubes
  • 1 tablespoon honey
  • croutons, optional
  • mangoes or strawberries, optional

Mango Dressing

  • ½ lime
  • ⅓ cup honey
  • ⅓ cup olive oil
  • ⅓ cup rice wine vinegar
  • 2 cloves garlic
  • 1 cup mango, cubed
  • ¼ cup orange juice
  • ½ teaspoon salt

Instructions

  1. Place greens in a large salad bowl.
  2. In a small container, toss Brie cubes in honey. Pour honey-coated Brie over the greens.
  3. Add croutons and sliced mangoes or strawberries, if desired.
  4. To make dressing, place all dressing ingredients in a food processor or blender. Puree or process until very smooth and evenly combined. Drizzle over salad.

Tips & Notes

Add grilled chicken or fish to turn this side salad into a main dish.
