Creamy Garlic Mashed Potatoes

Ingredients

  • 3 pounds Russet potatoes
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ½ cup chicken stock
  • ½ cup milk
  • ½ cup Greek yogurt or fat-free sour cream
  • ½ teaspoon salt
  • freshly ground black pepper, to taste
  • fresh chives, chopped

Instructions

  1. Scrub potatoes (leaving skins on) and place in a stockpot. Cover with water and boil until potatoes are soft, about 15 minutes.
  2. Meanwhile, heat olive oil in a skillet, add the garlic and saute until just fragrant.
  3. In a large mixing bowl, combine garlic, chicken stock, milk, yogurt or sour cream, salt, and pepper.
  4. Drain potatoes well and add to mixing bowl. Whip using a mixer until very light and creamy. The skins will break apart and mix into the potatoes.
  5. Garnish with chives and butter. Serve hot.
