Classic creamy tomato soup gets its savory flavor from basil, garlic and onions.
- Heat oil in pot over medium heat. Sauté onion and garlic in oil until soft, about 5 minutes.
- Add tomatoes and chicken stock, increase heat to high, and bring to a simmer.
- Reduce heat and simmer 20 minutes, stirring occasionally.
- Off heat, purée soup (can be puréed in the pot with an immersion blender.) Add cream, salt, pepper and chopped basil. Return soup to heat and serve immediately.
Tips & Notes
For a vegetarian version of this recipe, simply substitute the vegetable broth for the chicken broth, and add salt to taste.
