Hearty Lentil Soup

Ingredients

  • 3 tablespoons vegetable oil
  • 1 ½ cups onion, finely chopped
  • 1 tablespoon garlic, very finely minced
  • 1 heaping cup carrots, finely diced
  • 1 ½ cups sweet potato, peeled and finely diced
  • 1 cup celery, finely diced
  • 16 ounces lentils, rinsed, drained and sorted
  • 1 can (15 ounces) petite diced tomatoes
  • 1 ½-2 teaspoons Italian seasoning
  • 1 teaspoon ground black pepper
  • ½ teaspoon salt
  • 6 cups lower-sodium vegetable broth
  • 3 cups water
  • 4 cups collard greens, packed, stems trimmed and chopped
  • 2 teaspoons lemon juice

Instructions

  1. Heat oil in a large (5-quart or larger) stockpot over medium-high heat.
  2. Add onions, garlic, carrots, sweet potato and celery. Cook, stirring frequently, until just tender.
  3. Stir in lentils, diced tomatoes, Italian seasoning, pepper, salt, broth and water.
  4. Bring to a boil, reduce heat and simmer 35 to 45 minutes or until lentils are tender. Stir in collard greens and lemon juice, and simmer an additional 10 minutes or until greens are desired doneness.
