Watermelon Basil Ice

Watermelon and basil pair up for an extremely easy, yet sophisticated dessert.

Ingredients

  • 4 cups watermelon cubes
  • ¼ cup loose leaves of fresh basil
  • ⅓ cup honey
  • 3 tablespoons cider vinegar (can substitute with lemon juice)
  • 1/8 teaspoon salt

Instructions

  1. Freeze watermelon cubes for at least 2 hours.
  2. In a food processor or blender, puree frozen watermelon with all ingredients until very smooth; the basil leaves should be the size of pepper flakes.
  3. Taste after the first puree, and adjust honey and cider vinegar to taste. Pulse to break down the chunks of melon.
  4. Freeze in an airtight container until almost firm (about 2 hours). Puree again to crush large ice crystals.
  5. Freeze until ready to serve. Garnish with basil and serve this slushy slurry immediately.
