Zucchini Boats

Get creative with the kids on these easy, healthy and tasty zucchini “boats.”

Ingredients

  • 5 medium zucchini squash
  • ½ cup prepared rice
  • ½ cup garbanzo beans
  • ⅓ cup cheddar cheese, shredded
  • ⅓ cup salsa

Instructions

  1. Trim zucchini ends, cut in half lengthwise and scoop out the seeds to create a well, being careful not to break through the bottom or sides of each squash.
  2. Steam the zucchini shells until just softened, about 5 minutes. (To steam, place zucchini in a steamer basket in a saucepan filled with an inch of water over medium heat. Alternately, you can steam zucchini by microwaving on high for 3 minutes, or until just softened.) Allow zucchini to cool enough to touch.
  3. In a large bowl, combine rice, beans, cheese and salsa. Spoon the filling into each boat and place on a baking sheet. Set oven on broil setting. Place “boats” under the broiler and allow to heat through and turn slightly brown, about 10 minutes.

Tips & Notes

Any type of pre-cooked beans will work in this simple recipe.
