Ingredients
- 3 pounds boneless chicken breasts, thinly sliced
- 6 tablespoons butter, divided
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 2 tablespoons fresh ginger, grated
- 2 tablespoons Rogan Josh seasoning
- ½ teaspoon ground turmeric
- ¾ teaspoon ground coriander
- ½ teaspoon salt
- 1 can (14 ounces) crushed tomatoes, undrained
- 1 cup half and half, warmed
- 1 cup plain Greek yogurt, warmed
- 1 package (10 ounces) frozen spinach, thawed and undrained
- 1 sheet refrigerated puff pastry dough
- 1 egg, beaten
- fresh cilantro, chopped
Instructions
- Preheat oven to 425 degrees and grease a shallow 2-quart casserole dish. Cut chicken into 1-inch pieces.
- In a Dutch oven over medium-low heat, sauté onions in 3 tablespoons butter, cooking slowly until golden, about 15 minutes. Add garlic, ginger, Rogan Josh seasoning, turmeric, coriander and salt and cook 1 to 2 minutes until fragrant. Stir in tomatoes and cook 2 more minutes.
- Remove from heat and slowly stir in remaining 3 tablespoons butter, warm half and half, warm yogurt and spinach. Transfer mixture to a blender and puree until smooth. (Separate the mixture into thirds to puree in batches if necessary.) Adjust seasoning to taste. Return sauce to saucepan and stir in chicken. Spoon the mixture into the prepared casserole dish.
- Unroll puff pastry dough and cut dough into half-inch strips. Weave dough over top of chicken mixture to create a lattice pattern, allowing half an inch between strips. Trim edges and brush lightly with egg wash.
- Bake for 25 minutes or until pastry is golden brown. Remove from oven, brush with 1 tablespoon melted butter and sprinkle with cilantro. Serve warm.
