Ingredients
- 16 ounces (1 box) fettucine noodles
- 3 tablespoons olive oil
- 1 pound shrimp, peeled and deveined
- 2 teaspoons salt, divided
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 3 cups fresh spinach
- 2 ½ cups heavy whipping cream
- ½ teaspoon black pepper
- 1 cup Parmesan cheese, shredded
- ½ cup sun-dried tomatoes in olive oil, drained and sliced
- 2 tablespoons fresh basil, chopped
Instructions
- Fill a large pot with water and bring to a boil. Cook noodles according to package instructions. Drain and set aside.
- In a large pot or Dutch oven over medium-high, heat the oil. Add the shrimp to the pot and sprinkle 1 teaspoon of salt over the top. Cook shrimp for about 2 minutes on each side. Remove from the pot and set aside.
- Melt the butter in the pot and then add the garlic and spinach. Saute until spinach is wilted, approximately 2 minutes. Add the cream, remaining teaspoon of salt and black pepper. Allow to simmer for 5 minutes.
- Reduce the heat to low and add the cheese, tomatoes and fresh basil. Do not simmer the mixture once the cheese is added.
- Add shrimp and noodles back to the pot and toss to combine. Serve immediately.
