Creamy Pasta with Spinach, Sun-Dried Tomatoes and Shrimp

Ingredients

  • 16 ounces (1 box) fettucine noodles
  • 3 tablespoons olive oil
  • 1 pound shrimp, peeled and deveined
  • 2 teaspoons salt, divided
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 3 cups fresh spinach
  • 2 ½ cups heavy whipping cream
  • ½ teaspoon black pepper
  • 1 cup Parmesan cheese, shredded
  • ½ cup sun-dried tomatoes in olive oil, drained and sliced
  • 2 tablespoons fresh basil, chopped

Instructions

  1. Fill a large pot with water and bring to a boil. Cook noodles according to package instructions. Drain and set aside.
  2. In a large pot or Dutch oven over medium-high, heat the oil. Add the shrimp to the pot and sprinkle 1 teaspoon of salt over the top. Cook shrimp for about 2 minutes on each side. Remove from the pot and set aside.
  3. Melt the butter in the pot and then add the garlic and spinach. Saute until spinach is wilted, approximately 2 minutes. Add the cream, remaining teaspoon of salt and black pepper. Allow to simmer for 5 minutes.
  4. Reduce the heat to low and add the cheese, tomatoes and fresh basil. Do not simmer the mixture once the cheese is added.
  5. Add shrimp and noodles back to the pot and toss to combine. Serve immediately.
