Red Quinoa Tomato Salad

Healthy quinoa blends well with fresh tomatoes and salty feta cheese in this summer salad.

Ingredients

  • 3 cups cooked red quinoa
  • 1 cup cherry tomatoes (or miniature heirlooms), halved
  • 6 ounces feta cheese, crumbled
  • ⅓ cup olive oil
  • ⅓ cup white wine vinegar
  • 2 tablespoons honey
  • ½ teaspoon freshly ground black pepper
  • ½ cup pecan pieces, toasted
  • 2 cups mixed greens, chopped

Instructions

  1. Stir together all ingredients until well combined.
  2. Serve chilled.
