Skillet Beef Nachos

Ground beef, pinto beans, jalapeños and melted cheddar cheese combine in this easy skillet nachos recipe topped with pico de gallo and guacamole.

Ingredients

Skillet Beef

  • ½ pound ground beef
  • 3 teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • 1 teaspoon kosher salt
  • 1 can pinto beans, drained and rinsed
  • ½ cup water

Nacho Assembly

  • 9 ounces (1 bag) tortilla chips
  • 3 cups sharp cheddar cheese
  • ½ cup pickled jalapeño
  • Guacamole (optional)
  • Pico de gallo (optional)

Instructions

  1. Preheat oven to 425 degrees.
  2. Heat a large skillet to medium-high heat. Saute meat and grind into small pieces. Strain grease if necessary. Add back to pan with seasonings, pinto beans and ½ cup water. Simmer for about 5 to 8 minutes or until liquid is reduced and beans are soft.
  3. Put a layer of tortilla chips in a cast iron pan. Top with half the beef mixture, cheese and jalapeño. Add another layer of chips and top with the remaining beef mixture, cheese and jalapeño. Bake for 10 to 15 minutes or until cheese is melted and nachos are heated through.
  4. If desired, top with guacamole and pico de gallo before serving.
