Red, White and Blue Nachos

Topped with thick-cut bacon, cheese and sour cream, these patriotic nachos are the perfect picnic dish.

Ingredients

  • 8 pieces thick-cut bacon
  • 16 large blue corn tortilla chips
  • 2/3 cup refried beans
  • ⅓ cup salsa
  • 1 teaspoon cumin
  • 8 ounces white cheddar cheese, grated
  • 4 fresh tomatoes, halved and sliced thin
  • ⅓ cup sour cream
  • 1 bunch cilantro

Instructions

  1. Fry bacon until crisp. Drain excess grease and break each piece in half.
  2. Preheat oven to 350 degrees. Place the chips on a large cookie sheet.
  3. Stir together beans, salsa and cumin. Spoon evenly onto chips. Place half a piece of bacon over the bean mixture on each chip. Evenly distribute cheese over each chip.
  4. Bake for 12 to 15 minutes, until cheese is melted and beginning to turn golden. Remove from oven and place a small dollop of sour cream, tomato slice and cilantro sprig on top of each. Serve immediately.
